Description
Handcrafted fermented cabbage made in small batches, following a traditional recipe. Each batch ferments for 3 weeks, slowly developing its natural tang and crunch. No additives, no vinegar, unpasteurised – just cabbage, salt and time.
Fermentation & ingredients
Our cabbage is shredded, salted and packed by hand, then left to ferment in its own brine. The slow, natural fermentation keeps the cabbage crisp and full of live cultures.
